Watermelon Burger

Ingredients

  • 1 vegan burger patty, lightly seasoned (I used a small amount of seasoning salt)
  • 5-6 baby spinach leaves
  • 3 large mint leaves
  • 1 slice vegan feta (or enough to cover the top of the burger, if yours is very soft like mine was)
  • 2 thinly sliced watermelon pieces, large enough to cover the burger
  • 2 tbsp balsamic reduction (you can find this bottled near the regular balsamic or make your own)
  • sesame seeds for garnish

Instructions

  1. Blot the watermelon slices on some paper towel.

  2. Arrange the spinach leaves on top of one of the watermelon slices. Then add the burger, feta, mint, and top with the other watermelon slice.

  3. Drizzle with balsamic reduction and sprinkle with sesame seeds.
