Watermelon Burger

When I first saw this on the list of new midway foods, I knew immediately I was going to make it. This is basically a grab-and-go watermelon feta salad. What’s not to love?

No additional condiments required; as weird as this already is, mustard and ketchup would be weirder. Use your favourite vegan feta; I used slices of the Spread Em Greek Block.

Instructions below are for 1 burger; just multiply the ingredients by the number of burgers you want if you’re making more. The only thing I would do differently would be to use black sesame seeds; I think they’d look cooler.

And how does it taste?! It’s not bad! I think the novelty makes it worth preparing and trying at least once, and I could definitely see myself making mini slider versions of these to serve at a BBQ. It really is very much like a watermelon feta salad – the longer it sits the weirder it gets so best to just eat it quickly and enjoy. 😉

Watermelon Burger

Ingredients

  • 1 vegan burger patty, lightly seasoned (I used a small amount of seasoning salt)
  • 5-6 baby spinach leaves
  • 3 large mint leaves
  • 1 slice vegan feta (or enough to cover the top of the burger, if yours is very soft like mine was)
  • 2 thinly sliced watermelon pieces, large enough to cover the burger
  • 2 tbsp balsamic reduction (you can find this bottled near the regular balsamic or make your own)
  • sesame seeds for garnish

Instructions

  1. Blot the watermelon slices on some paper towel.

  2. Arrange the spinach leaves on top of one of the watermelon slices. Then add the burger, feta, mint, and top with the other watermelon slice.

  3. Drizzle with balsamic reduction and sprinkle with sesame seeds.
