Second last day of 10 Days of Vegan Stampede and we’re doing fries again! Generously sponsored by Plantbased Footprint’s Nacho Average Queso, this post is a fry fiesta!
Crispy, thick-cut skin on fries are topped with a generous amount of pico de gallo, smothered with Jalapeno Flavoured Queso, drizzled with my special cilantro lime crema and sprinkled with green onions. This crema is all the things – refreshing, tangy, creamy – and goes amazing on top of these fries. It also goes great on nachos, tacos, AND roasted brussel sprouts. It’s a fantastic sour cream substitute in many places. If you don’t like cilantro, I’m sorry, I can’t relate. I take extra on my bahn mi subs.
We’re almost at the end of 10 Days of Vegan Stampede 2024! Join me tomorrow for the final recipe. Don’t forget to tag me @veganinyyc and use the hashtag #10daysofveganstampede if you try any recipes. See you soon!
Salsa Fries
Ingredients
- 1 serving thick cut fries, prepared according to package directions
- ¼ cup pico de gallo (see recipe notes for a link to a great pico recipe)
- ¼ cup Nacho Average Queso Jalapeno Flavour
- 3-4 tbsp cilantro lime crema (recipe below)
- chopped green onion, for garnish
For the Cilantro Lime Crema
- ¼ cup soaked cashews
- ½ cup packed cilantro, stems removed (a little stem is fine but you want mostly leaves)
- ½ tsp garlic powder
- ¼ tsp chili powder
- ¼ cup lime juice
- cold water, as needed
- salt (to taste)
Instructions
Prepare the Cilantro Lime Crema
-
In the small jar of a high speed blender, add cashews, garlic powder, chili powder, and lime juice. Add enough cold water to make sure the cashews are covered – probably around ¼ cup.
-
Add cilantro, and then blend until smooth. Taste, and add salt as needed, blending to incorporate. Chill for 1 hr in the fridge; you can use it warm, but it tastes even better cold!
To Prepare the Fries
-
Add fries to serving basket. Add pico, Nacho Average Queso, and cilantro lime crema. Top with green onion pieces. Serve immediately.
