BBQ Jackfruit Mac & Cheese

10 Days of Vegan Stampede wraps up with this delightfully smokey and creamy BBQ Jackfruit Mac & Cheese.

We did it friends, Day 10. I’ve had a delicious time veganizing these Midway foods but I’ve saved my favourite for last – BBQ Jackfruit Mac & Cheese. Everything goes super well together and it kind of reminds me of pasta salad. I love it.

BBQ Jackfruit Mac & Cheeze

Ingredients

  • ¼-½ cup BBQ Jackfruit (recipe link in notes)
  • ¼ cup Broccoli Slaw (dressing recipe link in notes)
  • ½ cup cooked macaroni
  • ¼ cup Nacho Average Queso Original

Instructions

  1. Combine macaroni and queso and place at the bottom of your serving bowl.

  2. Add coleslaw, top with bbq jackfruit. Garnish with green onions or more queso!
